The food science

Tomatoes are a borderline case. Their natural pH often falls between 4.2 and 4.6, and some varieties come in above 4.6. Ingredients like onion and garlic raise the pH further. This is why shelf-stable tomato sauce needs added acid and a tested process, and why many states exclude it from cottage food.
