The food science

Cold-pressed juice is not heat-treated, so any bacteria on the fruit can end up in the bottle. Fresh juice is a TCS food, and wholesale juice requires a Juice HACCP plan with a validated 5-log reduction in pathogens, often achieved with high-pressure processing. This is why most states don't allow juice from a home kitchen, although many don't address it directly.
